Here at Ruffles and Rain Boots, we have recently decided that fudge is the new dessert of choice for both a little taste of sumthin-sweet or for a gift. This awesomely tasty salted caramel fudge was a teacher appreciation gift that I am, personally, jealous of. One taste and I was in loooove.

Seriously, the way the salt, chocolate and caramel flavors come together is so stunningly wonderful, I wish I’d kept this batch of fudge for myself–and sent the teacher something not as fabulous. But, alas, we do love our teacher this year, so I just snuck a couple squares of fudge and sent the rest to school…Sigh…

Tips to Make Chocolate Caramel Fudge

  • Making caramel flavored fudge is ridiculously easy. You’re just going to melt your white chocolate chips with your sweetened condensed milk and then fold in your food coloring. No sour cream, no candy thermometer, no evaporated milk, just chocolate and sweetened condensed milk and food coloring. Let that set up and then do the whole chocolate layer. It’s ah-mazing. Top with some large-crystal salt and BAM! It’s magic.
  • To make sure you can get your fudge out of the pan, the easiest thing is to use parchment paper sprayed with cooking spray. Do not, however line your pan with foil–it will stick to the fudge. #lessonlearned
  • When you cool your chocolate caramel fudge, you can let it sit on the counter and set to room temperature or you can put it in the fridge and let it chill. Either will work, but the fridge is much faster.
  • You can modify your decadent fudge recipe in a number of ways. To make your fudge unique for any holiday or event, just add some fun pops like:
    • Marshmallows
    • Marshmallow Cream (or is it Marshmallow Creme?!) Swirled
    • Peanuts (turn it into a Snickers Fudge recipe…mmm…)

Salted Caramel Fudge

I need to stop giving away my easy fudge recipes and hoard them for myself. Take this salted caramel fudge, for instance. I'm sad I gave it as a teacher appreciation gift. Sad. Me! LOL!

Ingredients

  • 1 can (14 oz) Dulce de Leche (or Sweetened Condensed Milk and 5 drops Caramel Flavoring Oil)
  • 
3 C white chocolate chips

  • 1 C milk chocolate morsels
  • 
1/8 tsp coarse sea salt
  • 1 tsp coarse sea salt for topping

Instructions

  1. Prepare a baking dish by lining with parchment paper and lightly spraying it with cooking oil. Set aside.
  2. With a double boiler, warm the white chocolate chips over medium heat, stirring constantly until completely melted and smooth. Alternatively, you can place the white chocolate chips in a microwave-safe bowl and microwave in 30-second increments, stirring between, until the chocolate is completely melted and smooth.
  3. Remove the chocolate from heat.
  4. Add the dulce de leche (or sweetened condensced milk and caramel flavoring) into the melted white chocolate chips and stir until combined well.
  5. Add the coarse sea salt and, again, stir to combine well.
  6. Pour this thick caramel fudge mixture into the prepared baking pan.
  7. Smooth the top of the fudge with a rubber spatula.
  8. Clean the double boiler pot or get a fresh one. Add the milk chocolate chips and warm over medium heat, stirring until the chocolate is completely melted.
  9. Pour the melted chocolate over the top of the caramel flavored fudge and smooth the top.
  10. Sprinkle the top of the fudge with the remaining salt.
  11. Allow fudge to rest on the counter to cool completely at room temperature for 3-4 hours. (Or speed set in the fridge for about 30 minutes to an hour.) This Easy Salted Caramel Fudge Recipe is a Dream (5)
