After the Baked Feta Pasta, Pesto Eggs are the new viral recipe on social medias. Like any viral recipe, the Pesto Eggs, or fried eggs with pesto, is a recipe that was posted on TikTok, the social network specializing in short videos, by Amy Wilichowski a dietitian from Boston.

The recipe was very quickly liked and reposted and in a few weeks the video had more than 11 million views and thousands of people have tested and published their Pesto Eggs video! So I couldn’t miss this recipe and therefore tested it for you.

Tips to make your Pesto Eggs

Like everyone else, to test this recipe, I first started by watching some videos. A priori no difficulty: we brown the pesto in a pan, add one or two eggs, and place everything on a slice of bread. The result is surprisingly good and very simple. However, I have a few tips for you to perfect this recipe!

  1. Be generous with the amount of pesto! Count a good tablespoon of pesto per egg because otherwise you will hardly feel the taste of pesto.
  2. Break your eggs delicately. Be careful when breaking your eggs over the pan, they can break easily (this is what happened to me with one of the two eggs). The reason? I had just taken them out of the refrigerator. So that this does not happen to you too, take your eggs out a few minutes before using them to avoid thermal shock.
  3. Watch out for splashing! The pesto brown in a pan may splash. In order not to get it everywhere, you can cover the pesto and eggs with a lid while cooking.
  4. Pay attention to the amount of salt. If you use industrial pesto, they usually contain a lot of salt. As a concequence, it is not necessary to salt the eggs or the avocados.

For 2 servings you need the following ingredients.

Ingredients

  • 2 slices of bread
  • 2 eggs
  • 20 g of pesto (about two tablespoons)
  • 10 g of cream cheese
  • 1/2 avocado
  • Pepper
  • Chili flakes

Preparation

Heat the pesto in a pan over medium heat. Then break the eggs over the pesto. Cook for 1-2 minutes while the fried eggs have the desired consistency.

Mash the avocado roughly with a fork. Toast the slices of bread.

Spread the cream cheese on the bread then add the avocado. Place an egg with pesto on each slice of bread.
